Fighting Style Design

With the Star Wars style, if you check their Wookiepedia (shakes head and sighs,) they'll give you the seven forms of lightsaber combat, from Sii-Cho and Soresu to Ataru and Juyo/Vaapad. Unarmed combat, you should look up Jedi Consulars, they are Jedi ambassadors that rely on lightsabers as a last resort.

As for Avatar styles, they're based on real life Chinese martial art styles.

Earth- Hun Gar, Toph's was Hungar and Praying mantis
Fire- Northern Shaolin Kung Fu
Water- Tai Chi
Air- Ba Gua

I'd say that you could use the Avatar (Chinese Martial Arts) when unarmed, while relying on the lightsaber combat forms when armed.
